§ 35756 Local Milk Pasteurization Standards

• •Cities and counties can make their own rules about milk being pasteurized (heated to kill germs).
• •They can also set higher standards for how much fat and other solids must be in milk.
• •These rules only apply to milk after it's been adjusted by the people who sell it.

A city decides all milk sold in stores must have at least 3.5% fat.

The city can do this because the law lets them set their own rules for milk, as long as it's after the milk has been processed by the seller.
