§ 34064 Pasteurization Record Retention

Key Takeaways

  • •If you use a machine to pasteurize milk, you must keep records of the temperature for at least one year.
  • •These records must be available for government officials to check at any time.
  • •The records help make sure milk is safe to drink.

Example

A dairy farm pasteurizes milk every day to sell in stores.

The farm must write down the temperature readings from their pasteurizing machine every day and save these records for a year. If a health inspector visits, the farm must show them these records to prove the milk was heated correctly to kill germs.
