§ 34007 Cheese Pasteurization Testing Requirements

Key Takeaways

  • •If you make soft fresh cheese (not the aged kind) using pasteurized milk, you must test the milk every day to check for something called phosphatase enzymes.
  • •You have to keep records of these tests for at least one year, and show them to inspectors if asked.
  • •If the test finds phosphatase enzymes, you must tell the health department right away.

Example

A small cheese factory makes fresh mozzarella every day using pasteurized milk.

The factory must test the milk every day to make sure it was pasteurized correctly. If the test shows the milk wasn’t pasteurized right (by finding phosphatase enzymes), they have to tell the health department immediately. They also have to keep records of all these tests for a year.
