§ 114221 Water Tank Access Requirements

Key Takeaways

  • •Water tanks must have a special opening on top for cleaning and checking inside.
  • •The opening must have a cover that fits tightly, has a rubber seal, and is sloped so water drains off.
  • •If the tank is hard to reach, you can write down a plan for cleaning it instead, but the plan must be approved first.
  • •The approved cleaning plan must be kept in the food truck or stand while it's open.

Example

A food truck has a big water tank inside that’s hard to reach for cleaning.

Instead of cutting a hole in the tank, the owner writes a step-by-step plan for how they’ll clean it safely. They send the plan to the health department, and once it’s approved, they keep a copy in the truck to show inspectors.
