§ 114201 Grease Trap Location Rules

Key Takeaways

  • •Grease traps can't be in food or utensil areas unless the health department says it's okay.
  • •Grease traps must be easy to reach for cleaning and maintenance.
  • •Older restaurants with grease traps already in food areas don’t have to move them.

Example

A restaurant wants to put a grease trap right next to where they wash dishes.

The restaurant can’t do this unless the health department gives them special permission. If they already had it there before 2007, they don’t have to change it.
