§ 39712 Uht Milk Production Standards

Key Takeaways

  • •UHT milk or cream must be made from good quality milk or cream that meets all the rules for that type.
  • •The milk or cream used doesn't always have to be cooled first if the person in charge says it's okay for making the product.

Example

A dairy company wants to make UHT milk that lasts a long time without needing to be in the fridge.

They have to start with good, clean milk. Normally, they would cool the milk first, but if they can show that cooling isn't needed to make the UHT milk safely, they don't have to cool it.
