• •The boss (chief) decides which slaughterhouses can skip this check.
• •These places must keep records of the animals they kill.
• •They must also save the animal skins until someone checks them or says it's okay to let them go.

A small farm in a remote area kills cows for meat.

If the farm is far away and it's hard for inspectors to get there before the cows are killed, the boss might say they don't need to check the cows first. But the farm must write down which cows they killed and keep their hides until an inspector sees them or says it's fine to throw them away.
