§ 114060 Food Display Protection Rules

Key Takeaways

  • •Food on display must be protected from germs by using things like sneeze guards, lids, or display cases.
  • •Food that is not pre-packaged can be sold in bulk, but only if a worker serves it to you and it's kept in clean, covered containers.
  • •Nuts in shells and whole raw fruits/veggies that you wash or peel yourself don’t need extra protection.

Example

You go to a buffet and see a big pile of cookies just sitting out with nothing covering them.

This is not allowed because the cookies need a sneeze guard or some kind of cover to keep germs away.

(b) Nonprepackaged food may be displayed and sold in bulk in other than self-service containers if both of the following conditions are satisfied: (1) The food is served by a food employee directly to a consumer. (2) The food is displayed in clean, sanitary, and covered, or otherwise protected, containers. (Amended by Stats. 2007, Ch. 96, Sec. 32. Effective July 20, 2007.)
