§ 35941 Homogenized Milk Standards

Key Takeaways

  • •Homogenized milk is treated so the cream doesn't separate and float to the top.
  • •After sitting for 48 hours between 40-50°F, the top part of the milk shouldn't have more than 10% extra fat compared to the rest when mixed.
  • •To test this, you take the top 100 cc of milk from a quart bottle (or a similar amount from other sizes) by siphoning it off.
  • •Even though it's homogenized, it still has to meet all the normal rules for regular milk.

Example

You buy a quart of milk from the store and leave it in your fridge for two days.

When you check the milk, the top part shouldn't look much creamier than the rest. If you test it, the fat in the top 100 cc shouldn't be more than 10% higher than the fat in the whole bottle after you shake it up.

In removing the top 100 cc. of milk, it shall be siphoned off. Homogenized market milk shall otherwise conform to all requirements for market milk. (Enacted by Stats. 1967, Ch. 15.)
