§ 33527 Milk Cooling Requirements

Key Takeaways

  • •Milk and cream must be cooled down quickly after being collected.
  • •They must stay cool until they reach the place where milk products are made.
  • •This rule helps keep milk fresh and safe to drink.

Example

A farmer collects milk from cows and puts it in a big tank.

The farmer must cool the milk right away and keep it cold until it gets to the factory where it’s turned into milk cartons or cheese. If the milk isn’t kept cold, it could spoil and make people sick.
