§ 27061 Poultry Moisture Content Limits

Key Takeaways

  • •You can't sell chicken or turkey meat with too much added water.
  • •The meat can have up to 4% extra water, but no more unless the rules say it's okay.
  • •The rules might allow a little more water if it's needed for normal processing and doesn't trick buyers.

Example

A grocery store sells chicken breasts that feel extra watery and heavy.

If the chicken has more than 4% added water, the store is breaking the law. They could get in trouble for selling soggy meat that isn't what the customer expects.
